From Bean to Cup: The Journey of Coffee Roasting
- Green Bean Selection: The journey begins with sourcing high-quality, ethically-sourced green coffee beans from trusted farmer-partners from around the world. At Sweetwater, we prioritize Fair Trade practices and sustainable farming methods, ensuring that our coffee is not only delicious but also positively impacts communities in which it is grown.
- Pre-purchase Cupping: Cuppers on our importing cooperative Co-op Coffees green quality receive samples from our farmer partners and score them on the Specialty Coffee Association (SCA) cupping scale. A coffee must achieve a score of 80 or higher to be judged as specialty grade. If a coffee does not achieve specialty status, we will reject it and ask to try other lots of coffee. Luckily our farmer partners almost always hit the ,ark the first time.
- Landed Sample Cupping: When the coffee is received in our warehouse another sample is cupped for quality. These samples must also achieve a 80 or higher on the SCA scale or it will be rejected.
- The Roasting Process: The core function of coffee roasting lies in time and temperature. At Sweetwater, each coffee origin has unique characteristics, and our specialized craft roasters adjust coffee profiles while applying the Maillard effect. Through precise control of heat and airflow, we bring out the beans’ natural flavors and aromas, creating a distinct flavor profile for each roast. The beans undergo a transformation during the process, from green and grassy to aromatic and full of flavor.
- The Roast Spectrum: We offer a range of roast levels to cater to different preferences:
Light Roast: Highlights the bean’s natural acidity and bright flavors, often with fruity or floral notes.
Medium Roast: Balances acidity and sweetness, offering a well-rounded cup with subtle complexity.
Dark Roast: Produces a bold, full-bodied flavor with rich, caramelized notes and a lower acidity.
- Cooling and Resting: After the roasting process, the beans are rapidly cooled to stop roasting and lock in the developed flavors. This is a critical step to preserve the coffee’s integrity. The beans are then allowed to rest, which allows the flavors to mature and mellow, ensuring a balanced and nuanced cup when brewed.
